Ready-made polenta can be cooked into a great breakfast, brunch, lunch or snack dish if paired with smart ingredients. I like to serve it with a fresh bean salad. My beans of choice for a flavorful and colorful salad are black beans or white beans. Perfect for a tailgate or football kick-off party. If white or black beans are not available, pinto beans will be just as tasty. For a non-vegetarian option, add shredded chicken or ground beef with chili beans. It’s a hearty dish waiting to be devoured by sport fans everywhere before the big game.
