A New Party Favorite

Ready-made polenta can be cooked into a great breakfast, brunch, lunch or snack dish if paired with smart ingredients. Polenta is cornmeal that can be boiled to be enjoyed as porridge, grilled or fried as savory patties. It cooks quickly and pairs well with bold and sweet flavors. I like to serve it with a fresh bean salad. My beans of choice for a flavorful and colorful salad are black beans or white beans. Perfect for a tailgate or football kick-off party. If white or black beans are not available, pinto beans will be just as tasty. For a non-vegetarian option, add shredded chicken or ground beef with chili beans. It’s a hearty dish waiting to be devoured by sport fans everywhere before the big game.
