A Burst of Mediterranean Flavor

Summer is in full swing here, and as such I find myself planning for oodles of parties, BBQs, and 4th of July cookouts. I know I can always bring a sweet treat to these shindigs, but for me, outside parties like this are all about the finger food.
I want to be able to enjoy my food while walking around and chatting with my friends and family, and this Greek Chicken Salad on Pita Chips is the perfect solution!
I adore chicken salad, but I feel like my friends don't try anything adventurous with it. It's simply shredded chicken, mayo, celery, and maybe some carrots. FRIENDS! CHICKEN SALAD CAN BE SO MUCH MORE!
Chicken salad is the perfect foundation for so many flavors. You could go southwest with some chipotle, black beans, and corn, or in this case, Greek! I added some sundried tomatoes, some ATHENOS Crumbled Feta Cheese, some pitted Kalamata Greek olives, and then flavored some KRAFT Original Mayo with their GOOD SEASONS Greek Salad Dressing Mix to bring a burst of Mediterranean flavor to every bite!
Now I just went the simple route of picking up pita chips at the grocery store, but you can also make pita cups by cutting out rounds of pitas and baking them in the bottom of a muffin tin for 10 minutes or so. Either way, you're sure to impress everyone at your next summer cookout with this fancy chicken salad!
If you aren't in need of a fabulous party appetizer, then whip up a big bowl of this Greek Chicken Salad to enjoy for lunch all week long! It tastes great between two slices of hearty bread, or even on a lettuce wrap!
