  • 2 TBSP. VEGETABLE OIL
    1 MEDIUM ONION, SLICED
    1 MEDIUM GREEN PEPPER, SLICED
    1 TSP CHILI POWDER
    1 28 OZ (795ML) CAN MEXICAN OR CAJUN STEWED TOMATOES
    1 CAN CHICKEN BROTH
    1 CAN RED KIDNEY BEANS, UNDRAINED
    1 CAN CORN, UNDRAINED (OR PREFERABLY 1 CUP OF KERNELS CUT OFF FRESH COB)

make it

SAUTE ONION & PEPPER IN OIL. STIR IN TOMATOES, BROTH & CHILI POWDER. BRING TO BOIL. SIMMER 5 MIN. ADD UNDRAINED KIDNEY BEANS & CORN. COOK COVERED 5 MIN. STIR OCCASIONALLY.

Rated  by m1kk135 on 9/8/2006 My kids loved this recipe! The only thing we changed was that we used a red bell pepper instead of a green one. My guys like the sweeter peppers better. They ask for it at least every two weeks and say it is one of their favorites.
