Hearty Santa Fe Chili

what you need
  • 1 lb. lean ground beef or ground chuck
  • 1 onion, chopped
  • 2 cans (10 oz. each) diced tomatoes and green chilies
  • 2 cups water
  • 1 can (16 oz.) kidney beans
  • 1 can (15 oz.) pinto beans
  • 1 can (15 oz.) black beans
  • 1 can (15 oz.) fiesta corn
  • 1 package (1 oz.) ranch dressing mix
  • 1 package (1.25 oz.) taco seasoning mix
  • Cheddar or Monterey Jack cheese (optional)
  • Sour cream (optional)
make it
Saute beef and onion in a large, heavy saucepan, stirring constantly to keep from sticking; rinse and drain to remove any grease.

Stir in tomatoes and green chilies, water, beans, corn and seasoning mixes. Stir and bring to a boil; reduce heat.

Simmer for 30-45 minutes, stirring occasionally. *Top if desired with reduced-fat Cheddar or Monterey Jack cheese and sour cream.
Notes
I try to make this at least a day in advance so the flavors can blend.
