what you need
- 24 cupcake liners (small)
- 24 vanilla wafers
- 2 pkg. (8 oz.) cream cheese, softened
- 1/4 cup sugar
- 2 eggs
- 1 Tbsp. lemon juice
- 1 tsp. vanilla
- 1 can cherry pie filling
make it
Line cupcake pans with paper liners. Place a vanilla wafer in each.
Beat softened cream cheese, sugar, eggs, lemon juice, and vanilla until light and fluffy. Fill cups 2/3 full with cream cheese mixture.
Bake at 375 degrees F for 15 - 20 minutes or until set. Top each with a spoonful of pie filling. Chill until served.
Notes
If you have small cupcake pans, use those and the petite cheesecakes will look better.
If you use medium liners, you can make larger cheesecakes but quantity will be reduced to about 12 cakes.
