what you need
- 1 quart chicken broth (or more)
- 1 Tbsp. ground cumin
- 1 Tbsp. ground coriander
- 2 Tbsp. oregano
- 1/4 cup Tabasco chipotle sauce
- 2 Tbsp. minced garlic
- 2 medium onions, quartered
- 2 bay leaves
- 2 Tbsp. bacon grease or butter melted
- 4 lb. pork sirloin roast or pork butt roast

In large pot bring broth to boil. Add all seasonings and veggies. Place pork in liquid and reduce heat to simmer. Simmer 2-3 hrs till it shreds with a fork.
Remove pork from liquid and shred. Remove the onions from liquid. Put shredded pork in casserole dish and add the onions. Add bacon grease or butter to pork and about 3 cups of the simmering liquid, mix well.
Roast at 425°F for about 20 minutes stirring once. Pork should be sizzling and slightly browned.
Notes
Alternate browning instructions. In heavy frypan melt the grease or butter. Add the shredded pork without any liquid. Fry till brown and sizzling, add 3 cups liquid and stir till absorbed. Cook till no excess liquid shows.
