Peach Crowned Coconut Pie

what you need
- 1 3/4 cups milk
- 1 pkg. (3 3/4 oz.) Jell-O Coconut Cream Instant Pudding and Pie Filling
- 1 butter flavored pie crust
- 2 cups sliced peaches
- 1/3 cup sugar
- 1 tablespoon cornstarch
- 1/2 cup water

In medium mixing bowl, combine cold milk and pudding mix. Beat until well blended on low speed for 1 minute.
Pour mixture into crust and chill for 2-3 hours.
Arrange sliced peaches over pudding. In saucepan combine sugar, cornstarch, and water. Bring to a boil, stirring constantly. Spoon or brush mixture over peaches. Chill 1 to 2 hours.
Notes
This pie can also be made with 1 cup Baker's Toasted Flaked Coconut.
You can use any flavor pudding you like and omit the fruit.
You can also top it with whipped cream.
