what you need
- 3 cups apples, peeled & chopped
- 1/2 cup apple juice
- 1 cup brown sugar (packed), divided
- 2 cups flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. allspice
- 1 cup oatmeal (not instant)
- 1/2 cup sour cream
- 2 eggs, beaten
- 1/4 cup melted shortening or oil
- 1 cup raisins
- 1 cup pecans (chopped)

Combine the apples, juice, and 1/2 cup of the brown sugar. Cook for about 5 minutes or until the apples are almost tender. Cool apple mixture.
Preheat oven to 350°F. Grease a Bundt pan. Stir together dry ingredients in large bowl. Add the apple mixture, the remaining brown sugar, sour cream, egg and the melted shortening or oil. Mix until just moistened. Stir in the raisins and the pecans. Pour into prepared Bundt pan.
Bake for about 40 minutes or until a toothpick comes out clean. Cool for 10 minutes in pan.
Can be eaten warm or cool.
Notes
You may glaze the cake with a mixture of 1 cup powdered sugar and 2-3 tsp. heavy cream.
