Beef and Biscuit

what you need
  • 1 lb. beef
  • 1 can tomato soup condensed
  • 1/2 can water
  • 1 large container cottage cheese
  • 2 cups shredded cheddar cheese, divided
  • 1 can flaky biscuits or can make homemade
make it
Cook beef. Drain grease, put back in pan. To beef add tomato soup, 1/2 can water (use soup can), cottage cheese, and 1 cup cheddar. Cook until cheese is melted.

Pour this mixture in 9 x 13-inch casserole dish. Place uncooked biscuits on top to cover completely. Sprinkle remaining cheese on top.

Bake at 350 degrees F until biscuits are done.*
Notes
*Allow enough time for the bottom of them to get done. Also may want to check them by lifting up slightly with fork to make sure they still are not doughy.

Rated  by candysmooch on 1/26/2005 I loved this recipe! Simple & great combo of ingredients. I had to cook it a lot longer since I made homeade biscuits with it and when it came out of the oven it was more like a soup than a casserole so I served it in bowls like a soup w/ dumplings. After I refridgerated the leftovers was when it had set up thick like a casserole. I would recommend baking it in a big bowl casserole dish instead of the 13x9 pan. Really enjoyed it - thanks for sharing!
