what you need
- 1 bag (16 oz.) frozen cauliflower florets
- 2 tablespoons butter
- 4 oz. cream cheese
- 1 lb. cooked chopped bacon
- 8 oz. shredded cheese, any kind
- 2 Tablespoons scallions (I skip these)
make it
Microwave cauliflower with 2 tablespoon water for 10-15 minutes until VERY soft. Drain.
Then mash with hand potato masher in oven safe dish (or puree in chopper if you like that consistency) with butter. Add cream cheese and mix well. Add remaining ingredients.
Bake at 350°F for 20 minutes until brown and bubbly.
Notes
I usually bake mine for 30 minutes instead, so the cheese is melted. Also, I broil mine the last minute or so to make it crispy.
