Salmon with Tarragon Butter

what you need
- 3 Tbsp. butter
- 1 1/2 Tbsp. fresh lemon juice
- Ground pepper
- 2 1" thick salmon fillets (about 3/4 lb.)
- Salt
- 1 tsp. dried crumbled tarragon
make it
Preheat broiler. Melt butter and lemon juice over low heat. Remove from heat and add a generous amount of pepper.
Arrange salmon skin side down in a broiler-proof pan. Brush with half of butter/lemon juice mixture and lightly season with salt.
Broil until just cooked through and transfer to plate. Add tarragon to remaining butter mixture and spoon over the salmon.
Notes
One can use light butter to cut fat and calories. I use coarse salt. This is a low carb meal.
