My Favorite Pasta Salad

what you need
  • 1/2 pound rotelle pasta
  • 1/4 cup olive oil
  • 1 and 1/2 tablespoon red wine vinegar
  • 2 pepperoncini peppers, minced
  • 2 garlic cloves, minced
  • 1 scallion, thinly sliced
  • 2 tablespoons chopped fresh Italian parsley
  • 1 tomato, seeded and diced
  • 1/2 cup diced green bell pepper
  • 1/4 cup coarsely chopped black or Kalamata olives
  • 1 ounce each sliced hard salami and provolone cheese cut into thin strips
  • 3 cups shredded romaine lettuce
make it
Cook pasta following package directions, drain well and set aside.

In a large bowl, whisk together the oil, vinegar, pepperoni, garlic, scallion, and parsley. Season with salt and pepper. Add the pasta to the dressing and toss well. Add the rest of the ingredients, mix well, but gently.

Refrigerate at least 1 hour to let flavors blend, serve over the shredded romaine.
This recipe can be doubled or tripled ect. for a great pot-luck dish.

I cater for my husband’s office, and this dish is the first to go!
