Easy Baked Chicken with Wine Sauce

what you need
  • 4 chicken breasts
  • Salt & pepper
  • 1 medium size can cream of mushroom soup
  • 1 tsp. white wine
  • 4 slices baby Swiss cheese from deli (or from package)

Preheat oven to 350°F. Sprinkle salt & pepper on chicken breasts on both sides (go easy on the salt). Place chicken breasts in a small round cake pan.

In separate bowl create sauce by mixing cream of mushroom soup and wine (if you think the sauce is too thick, you can add 1 tsp. of water, the natural chicken juices should make sauce a little thinner.) Pour sauce over chicken.

Bake for approx. 30 minutes or until cooked through. Check chicken breast with a knife and fork to make sure chicken is completely cooked.

Put the chicken breasts on a plate. Place a slice of Swiss cheese over each chicken breast. Pour remaining sauce over chicken breasts.
This can be served over rice or with pasta. You can also add more wine, depending on how strong you want the flavor (1 tsp. was enough for me). I also think dark steamed vegetables such as broccoli would be a good side dish.

To be healthy look for organic chicken breast with no hormones.
