what you need
- 2 lb. fish filets, fresh if possible (grouper, snapper, monk)
- 1 box Cheese Nips
- 1/2 cup Kraft Grated Parmesan/Romano Cheese, divided
- 1/2 cup Kraft Thousand Island Dressing
- 2 tsp hot sauce
- Butter flavor cooking spray
- 1 cup seasoned flour*

Preheat oven to 375 degrees F. Rinse fish under cold water, pat dry and set aside. Cut fish into 8 (4 oz. each) servings. Spray the bottom of a 9x13 baking dish with the butter flavor spray. In a plastic bag, crush Cheese Nips; remove 1/2 cup and sprinkle in the baking dish, coating the bottom. To the bag, add hot sauce and 1/4 cup parmesan/Romano cheese, tossing to combine well.
Dredge a piece of fish in the flour, " paint" with 2 Tbsp. of dressing, coat with the Cheese Nips and place into baking dish; continue with the remaining fish. Sprinkle with the remaining 1/4 cup of parmesan/Romano cheese.
Place in oven and lower temperature to 325 degrees F. Bake for 10-15 minutes or till fish flakes easily with a fork. Remove from oven and serve immediately.
Notes
*Seasoned flour: use your own recipe or try this one (also works well with all types of meat): combine well 1 cup (all-purpose) flour; 1 Tbsp. each garlic powder, onion powder, Old Bay Seasoning, chopped dry chervil (or parsley), snipped dry chives; 1/2 tsp. each of salt (optional), fresh ground black pepper, celery seed; and 1/4 tsp. dried tarragon.
