Oatmeal Cake with German Chocolate Icing

what you need
  • CAKE:
  • 1 cup oatmeal
  • 1 1/4 cup (hot) water
  • 2 eggs
  • 1 cup brown sugar
  • 1 cup white sugar
  • 1/2 cup shortening (not oil)
  • 1 1/3 cup all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • ICING:
  • Cook in sauce pan
  • 1 cup evaporated milk
  • 1 cup sugar
  • 1 stick margarine
  • 3 egg yolks
  • Cook until thickened
  • ADD:
  • 1 teaspoon vanilla
  • 1 cup Bakers coconut
  • 1 cup pecan pieces
make it
Grease and flour 13x9 cake pan
Bake 35 minutes at 350

Let icing and cake cool, then add icing.

Very Moist cake
