Easy Banana Bread

what you need
  • 2 cups all purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup granulated sugar
  • 1 stick margarine (or butter)
  • 2 RIPE bananas
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/4 cup milk

Preheat oven to 350 degrees F. With a wooden spoon, mix flour, salt and baking soda in medium sized mixing bowl. Set aside. Cream sugar and margarine (or butter) together in a large mixing bowl. Add bananas, eggs, vanilla and milk. Beat with electric mixer until slightly lumpy. Add flour mixture slowly, using the wooden spoon.

Pour mixture into small loaf pans that have been sprayed lightly with a non-stick spray. Place loaf pans on a cookie sheet inside oven.

Bake 1 hour. Check for doneness by inserting toothpick. Remove from oven. Immediately remove bread from loaf pans. Cool. Wrap in plastic wrap or aluminum foil. ENJOY!!!!
I use this recipe frequently and love hearing how much people enjoy it. It is simple to make and most people have the ingredients at home already.

The next time you have a couple of bananas you are going to throw away, take 20 minutes to make a batch of banana bread. You will be surprised how quickly you have put a smile on someone's face!!

Rated  by ryan0206 on 5/17/2009 I cooked it for 50 minutes vs an hour and it came out fine. The bread was nice and moist. My 2 boys even loved it.
