what you need
- 8 pieces wheat bread (or your favorite bread)
- 8 tsp. soft whipped cream cheese
- Dill weed
- 2 medium cucumbers, peeled and very thinly sliced
- Salt to taste
make it
Spread each slice of wheat bread with one tsp. soft whipped cream cheese. Lightly sprinkle the cream cheese with dill weed to taste (Less is more - the dill can take over the gentle taste of cucumbers, so be careful).
Layer the thinly sliced cucumbers on the cream cheese and lightly sprinkle with salt to taste. Then, cover with another slice of bread to make a sandwich.
Using a sharp serrated knife, trim away the crust and slice each sandwich into four finger sandwiches. These may be refrigerated until you need them for a couple of hours. Stack on a pretty plate, and garnish with fresh dill.
Notes
I am on weight watchers, so I use light bread and fat-free cream cheese. This is a great summer treat and my friends love them.
