what you need
- Filling:
- 1 cup sugar
- 2 tsp. flour
- 1 egg
- 1/2 tsp. vanilla
- 2 cups rhubarb - cut in 1/2" pcs.
- 1 single layer pie crust
- Topping:
- 1/3 cup butter
- 1/2 cup brown sugar
- 3/4 cup flour
make it
Stir filling ingredients together and place in pie crust.
Stir topping ingredients together and sprinkle on top of pie. To prevent overbrowning, cover with foil.
Bake in 375 degrees F oven for 25 minutes. Remove foil and bake for another 25 minutes or until golden brown.
Notes
People who don't like rhubarb love this pie.
