Homemade Coconut Cream Pie

what you need
- 3/4 cup granulated sugar
- 1/2 cup all purpose flour
- Dash of salt
- 2 cups milk
- 3 egg yolks, beaten
- 3 tablespoons margarine
- 1 teaspoon vanilla
- 1 baked pie crust
- (Meringue)
- 3 egg whites
- 3-4 tablespoon sugar
- 1 teaspoon vanilla
- 1/2 cup shredded coconut
make it
In non stick pan, mix sugar, flour and salt. Gradually add milk and egg yolks, stirring until well blended. Place pan on low heat. Stir until mixture starts to thicken. Do not over cook -- mixture will thicken when it cools.
Remove from heat and add margarine and vanilla. Stir until creamy. Cool, and then pour in baked pie crust
(Meringue)
Beat egg whites until stiff. Add sugar and vanilla. Continue beating until well blended. Spread on cooled filling. Sprinkle with coconut. Brown in 450 degrees F oven. Cool well before serving.
Notes
If you prefer coconut in the pie, you can pour 1/2 cup coconut in filling. My family recipe only put the coconut on the top, and then browned it in the oven. Either way would be ok.
