what you need
- 2 2/3 cups sugar
- 2/3 cup margarine, melted
- 3 cups shredded zucchini
- 4 eggs
- 2/3 cup water
- 3 1/3 cups flour
- 2 tsp. baking soda
- 1 tsp. cinnamon
- 1 tsp. ground cloves
- 2 tsp. vanilla
- 1/2 tsp. baking powder
- 2/3 cups raisins (optional) best with golden raisins
- 2/3 cup chopped walnuts (optional)

Preheat oven to 350 degrees F. Grease bottoms only of 2-3 loaf pans. (I spray with PAM cooking spray).
Mix sugar and margarine in bowl, then stir in zucchini, eggs, and water. Stir in remaining ingredients (except raisins and walnuts) mix well. Now add raisins and walnuts and mix.
Pour into pans. Bake until wooden toothpick comes out clean, about 60-70 minutes. Cool 5 minutes, then loosen sides from pans and remove. Cool completely before slicing.
Notes
This recipe usually makes 3 loaves. They can be wrapped and frozen to have later.
