Chicken/Shrimp/Rice Dinner

what you need
- 4 chicken thighs
- 3 Tbsp. olive oil
- 1 Tbsp. butter
- 1/2 cup white wine
- Fresh tarragon or 1 tsp. dried
- 4 - 6 garlic bulbs, crushed and diced
- 1 can diced tomato
- 1 cup rice
- 1 lb. medium shrimp
make it
Saute chicken in olive oil and butter in large skillet until browned on both sides. Remove chicken from skillet and add white wine, bring to boil scraping bottom of pan, blend to make sauce.
Place chicken back into skillet and add spices and herbs and diced tomato. Pour rice over the chicken and tomato mixture, cover and cook for 45 minutes or until rice is done.
Add shrimp and cover, cook additional 10 -15 minutes or until shrimp is cooked. Serve with a side of your favorite vegetable and dinner rolls.
