Jan Hagel Cookies

what you need
  • 1 cup butter
  • 1 cup sugar
  • 1 egg yolk
  • 2 cups all purpose flour
  • 1 tsp. cinnamon
  • 1 egg white
  • 1 cup Planters sliced almonds
  • Parchment paper or wax paper
make it
Combine butter & sugar. Add & blend egg yolk. Sift together flour and cinnamon and stir.

Press mixture into a 15x10x1" pan that has been lined with either wax paper or parchment paper. Beat egg white until frothy and spread over mixture. Sprinkle with almonds.

Bake at 350 degrees F for 20 minutes. Remove from oven and cut to desired pieces while still warm. (appox. 2"x2") Then place back in oven (turned off) to continue to crisp.
Store in airtight container.

Rated  by a cook on 5/17/2009 Not too sweet - just right. Tastes like homemade shortbread cookies, but the almonds add great texture. Addicting too.
