Luscious Apple Cake

what you need
  • Cake:
  • 1 1/2 cups white sugar
  • 1/4 cup margarine
  • 2 eggs
  • 6 Tbsp. sour milk or buttermilk (can use regular milk)
  • 2 1/4 cups flour
  • 1 1/2 tsp. baking soda
  • 3 tsp. nutmeg
  • 1 1/2 tsp. cinnamon
  • 3/4 tsp. salt
  • 3 cups peeled, diced apples (any kind of good cooking apples)
  • Topping:
  • 1 1/2 cups light brown sugar mixed with
  • 1 Tbsp. flour, moistened with
  • 3 Tbsp. cream or milk
  • 3/4 stick margarine
  • 1/2 cup Planters chopped pecans

Cream sugar and margarine. Add eggs, then milk and dry ingredients. Add apples last and mix.

Spread in a 9 x 13 pan/dish that has been greased and floured or sprayed with cooking spray. Bake 350°F for 40 minutes or until center tests done.

While cake is baking, prepare topping. Mix brown sugar, 1 Tbsp. flour, moistened with cream or milk. Add 3/4 stick margarine and boil about 5 minutes. Add chopped pecans. When cake has cooked 40 minutes, spread topping on cake. Return to oven for 5 minutes (I usually put it back in the oven under the broiler until the topping bubbles then take out and let cool – it’s also yummy when warm).
