what you need
  • 3 Tbsp. butter
  • 3 Tbsp. all purpose flour
  • 1-1/2 cups half-and-half cream
  • 1-1/2 cup shredded cheddar cheese, divided
  • 3/4 tsp. salt
  • 1/2 tsp. ground mustard
  • 1/4 tsp. dried dill weed
  • 2 Tbsp. fresh or 1 tsp. dried basil
  • Dash of cayenne pepper
  • 1/2 lb. small uncooked shrimp
  • 1-1/2 lb. salmon fillets
make it
Preheat oven to 400 degrees F. In a large sauce pan melt butter. Whisk in flour till smooth. Gradually add cream. Bring to a boil, cook and stir for 2 min or until thickened. Add 1 cup cheese plus the salt, mustard, dill, basil and cayenne. Stir till all the cheese is melted. Remove from heat and stir in shrimp.

Place salmon in a greased baking dish. Pour shrimp mixture over salmon. Then sprinkle the other half cup of cheese over salmon.

Bake uncovered at 400 degrees for 25-30 min or till fish flakes easily with a fork and shrimp turn pink.
Notes
What I like to use is Pam garlic cooking spray. Just spray the dish, drop the fish in, and yer ready to go.
