Champagne Injected Turkey

what you need
  • 10 to 12 lb. turkey
  • 2 Tbsp. salt
  • 2 Tbsp. pepper
  • 2 to 3 granny smith apples
  • 1 bottle white champagne
  • 2 Tbsp. olive oil
  • Injector
  • Cooking bag
make it
Wash and dry turkey. Mix salt and pepper in small bowl and set aside. Wash and cut apples in slices and set aside.

Rub inside of turkey with small amount of salt and pepper mixture. Place apples inside turkey.

Pour champagne in measuring cup (2 cup) size. Inject turkey starting with legs working all around turkey, use all of champagne, making sure to inject the breast until really full. Go all around turkey more than once with injected champagne.

Rub olive oil and salt and pepper on turkey. Place in cooking bag and cook according to weight.
Notes
You can also inject some of the champagne inside the turkey on top the apples. Oven temps vary and may need to be adjusted.

I place mine in a 325 degree oven for 4 hours then turn it down to 200 degrees and cook for 1 and a half more hours. It has always come out prefect.

My family, all 30 of them, love this recipe. I have to cook 2 turkeys every Thanksgiving, it is that good. I do have to cook the other one in my neighbors oven just in case you were wondering.

The champagne does not have to cost alot, about $8.00 is what I spend.
