what you need
  • 5 lb. pork roast
  • -------VERDE SAUCE---------
  • 2 cans (28 oz. each) tomatillos, drained
  • Salt & pepper to your liking
  • 1 jalapeno deseeded
  • 1 jalapeno with seeds
  • 2 garlic cloves
  • 3/4 tsp. ground cumin

Turn crock-pot on high. Cut the pork meat into small cubes about 1 inch, and then put into crock-pot for 1 hr. After 1 hr turn the crock-pot to low for 6 hrs.

When it's close to 6 hrs of cooking the pork, pour the juice from the tomatillos out and pour the tomatillos and the rest of the ingredients into a blender and blend into a liquid.

Take the pork out of the crock-pot and pour the fat out of the crock-pot. Return pork to crock-pot and pour all the liquid from the blender over the pork. Turn the crock-pot to high for 2 hrs. After 2 hrs, check to see if the pork is tender enough. If not, cook 1 hr longer. Serve any way you want to.
Notes
You can also leave the pork uncut. Just add 2 hrs to the cooking time.
