what you need
- (Crust:)
- 3 egg whites
- 1/2 teaspoon cream of tartar
- 1 cup sugar
- 18 small saltine crackers, finely crushed
- 1/2 cup chopped pecans
- 1 teaspoon vanilla
- (Topping:)
- 1/2 pint whipping cream
- 2 tablespoons granulated sugar
- 2 tablespoons crushed pineapple
make it
Crust:
Beat egg whites until foamy. Add cream of tartar & beat until stiff & dry. Gradually add sugar. Fold in (finely) crushed crackers & nuts. Add vanilla.
Pour in lightly greased (9 inch) pie plate. Form crust on bottom & sides. Bake 30 minutes at 300 degrees F. Cool.
Topping:
Beat whipping cream & sugar. Fold in pineapple. Pour on top of crust. Refrigerate until ready to serve.

This pie is served in a restaurant in the Arkansas Ozarks. Everyone who goes there always asks for a piece of this pie.
