what you need
- 1 lb. ground beef
- 1 small onion, diced
- 1 can (14.5 oz.) petite diced tomatoes (with mushrooms optional)
- 1 small zucchini, diced
- 1 small summer squash, diced
- 2 tsp. Italian seasoning
- 1 box (8 oz.) spaghetti
- 1 can (26 oz.) spaghetti sauce
make it
1. In a Dutch oven or large skillet, brown the ground beef until cooked through, about 5 minutes. Add the onion and cook for another 3 min.
2. Add tomatoes, zucchini, summer squash, and Italian seasoning. Cover and cook over low heat for about 15 min. or until the vegetables are done to your likeness.
3. While sauce is simmering, cook the spaghetti according to the directions on the package. Drain and rinse well. Place pasta on a large serving platter and spoon the sauce over it to serve.
Notes
My son helped me invent this recipe one night when we were trying to come up with a dish that would use ground beef, zucchini, and summer squash. It went over very big in my house and is now one of our favorite ways to have spaghetti.
