what you need
- 1 lb. hamburger
- 1 medium onion, divided
- 6-8 medium carrots
- 4-6 medium potatoes
- 2 cans vegetable soup
- Salt and pepper to taste
make it
Brown hamburger with half the onion.
Peel and dice carrots and potatoes. Place in pan of unsalted water with the other half of onion. Bring to a boil and boil about 2 minutes until barely fork tender. Cook vegetables too long and it will be mush!!
Drain hamburger and pour into casserole dish. Pour soup into casserole. Add about 2 cups or less of vegetable water and add vegetables. Salt and pepper to taste.
Bake at 350 degrees F for 30 minutes or until vegetables are done.
Notes
Over cooking the vegetables when boiling will create mush. Cook just until barely fork tender.
This is a great recipe and with a lot of flavor. I make it ahead of time and just pop it in the oven to heat through and cook the vegetables.
