Salmon Loaf

what you need
  • 3 cans (14 3/4 ounce) red salmon
  • 5-6 crackers
  • 2-3 eggs
  • 1/4 cup milk
  • 1/4 cup lemon juice
  • Salt and pepper to taste
make it
Drain and clean salmon, break salmon up with a fork until fine consistency.

Add remaining ingredients and mix. Salmon loaf should be moist enough to hold together and slightly mushy.

Bake at 350 degrees F for about 45 minutes. You can add onions to this. I prefer it without.
What takes the time on this recipe is cleaning the three cans of salmon. After that it is easy!! I serve it with boiled potatoes and a salad or corn.

Rated  by a cook on 2/16/2005 Actually, the small bones found in cans of salmon are soft enough that they can be eaten. It may not sound desirable, but they are an excellent source of calcium.
