Easy Chicken Piccata

what you need
  • 1 1/2 pounds boneless skinless chicken breast
  • 2 Tbsp. flour
  • 2 Tbsp. season salt
  • 4 Tbsp. butter or margarine, divided
  • 1/4 cup water
  • 1 Tbsp. capers
make it
Heat a large skillet to med-high. Coat chicken in a plastic bag with flour and seasoned salt, mixed together. Just lightly coat.

Add one Tbsp. of butter to skillet and add chicken. Cook on one side, without turning, for about 5 minutes, or until golden brown.

Turn, add remaining butter, broken up around the chicken, water, and capers. Cook about 2-3 minutes or until butter begins to thicken and chicken is done.
Serve hot. It will melt in your mouth. Best with grains.

Rated  by Staceywood on 3/8/2005 I'm SO SORRY! Actually, I don't ever measure my seasoned salt, but I do use quite a bit since it is mixed with the flour (which can have an awful taste). Just mix up some flour and season salt for the chicken to coat in. It's up to you for the taste. The sauce will wash a lot of the flour mix away and it will become the sauce. AND YES!! I can't believe that I forgot to mention the lemon juice! :( Just a good swirt or two should do it. Sorry again! You know, my pizza recieved 5 stars, but the last time I made it -- it was terrible!! Funny!
