Easy Enchilada Rice Casserole

what you need
  • 6 cups cooked rice (any kind)
  • 2 lb. ground chuck
  • 2 cans Ro*Tel tomatoes with chilies
  • 2 small cans tomato sauce
  • 2 pkg. enchilada spice mix (found in the taco section)
  • 1 large package cheddar cheese
make it
Preheat oven to 350°F. Cook rice as directed. Brown beef & drain.

Mix beef, rice, tomatoes, sauce, and spice mix. Mix well.

Pour into 13x9 pan and sprinkle with full bag of cheddar cheese. Bake in oven until cheese melts and serve.
This is a great tasting easy recipe. Perfect seasoning. I usually serve it along with salad and bread. Rate it and let me know what you think! Enjoy!
