White Chocolate Coconut Cream Cheese Frosting

what you need
  • 1/2 cup butter
  • 2 tsp. vanilla extract
  • 1 1/2 cups white chocolate chips
  • 1 pkg. (8 oz.) cream cheese
  • 3 1/2 cups powdered sugar
  • 1 cup coconut
  • 1 cup chopped walnuts
make it
In med. saucepan - on low - slowly melt butter, vanilla, white chocolate chips and cream cheese together until smooth. Add powedered sugar and blend. Remove from heat.

Fold in coconut & nuts. Pour immediately on cooled cake or whatever it is your using this frosting for! Icing will set up.
This is a thick creamy icing that is wonderful, is sweet but not too rich. I love to use this recipe on a homemade spiced carrot cake recipe that I also have posted with this frosting.
