Spiced Butterscotch Carrot Cake with White Coconut Cream Cheese Frosting

what you need
  • CAKE:
  • 4 Eggs
  • 1 cup Vegetable Oil
  • 2 cups Flour
  • 1 cup brown Sugar
  • 1/2 cup white sugar
  • 2 tsp. Baking Soda
  • 1 tsp. Baking Powder
  • 1/2 tsp. Salt
  • 2 Tbsp. Vanilla Extract
  • 4 Tbsp. Ground Cinnamon
  • 2 Tbsp. Ground Cloves
  • 3 cups Grated Carrots
  • 1 chopped Walnuts
  • 1 pkg. Butterscotch Chips
  • FROSTING
  • 1/2 cup Butter
  • 2 tsp. Vanilla Extract
  • 3 1/2 cups Powdered Sugar
  • 1 1/2 Cups White Chocolate Chips
  • 1 pkg. (8 oz.) Cream Cheese
  • 1 cup Coconut
  • 3/4 cup chopped Walnuts

CAKE: Preheat oven to 350. Grease and flour 13X9 pan.

In large bowl beat eggs, oil and vanilla. Stir in flour, sugar, brown sugar, baking soda, baking powder, salt, vanilla, cinnamon, clove. Mix well.

Fold in carrots, walnuts and butterscotch chips until blended. Bake for 40-50 minutes or until toothpick in center comes out clean.

FROSTING:

In medium saucepan - on low - slowly melt butter, vanilla, white chocolate chips and cream cheese together until smooth. Add powdered sugar and blend.

Remove from heat. Fold in coconut & nuts. Pour immediately on slightly or cooled cake.
