what you need
  • 4-6 boneless chicken breasts
  • 1 pkg. reduced fat shredded cheddar cheese
  • *you may also substitute any shredded cheese of your choice
  • 1 Tbsp. I can't Believe It's Not Butter
  • 3 Tbsp. fat free or reduced fat sour cream
  • Italian bread crumbs
make it
Preheat oven to 350 degrees. Cut fat off of chicken, and butterfly them so that they open on one side.

Mix approximately 3/4 (or less/more) of the shredded cheese with butter and sour cream.

Dip bottom of chicken in bread crumbs, place in baking pan. Stuff mixture inside chicken, evenly, close chicken, and then sprinkle the rest of bread crumbs on top.

Let bake covered approximately 35 minutes, or until chicken is no longer pink inside.
Notes
You can substitute the amount of the ingredients and it doesn't really make a difference.

Tastes great with green beans.
