what you need
- 3 pounds chicken, cut up
- 1/4 cup oil
- 2 medium onions, cut in 1/4 inch slices
- 2 cloves garlic, minced
- 1 can (1 lb.) tomatoes
- 8 oz. tomato sauce
- Salt
- 1 teaspoon oregano
- Basil, crushed
- 1/2 teaspoon celery seed
- 1 or 2 bay leaves
- Mushrooms
- Peppers
- 1/4 cup dry white wine
make it
Brown chicken in oil. Remove the chicken and cook the onions and garlic until tender but not brown.
Return chicken to skillet. Add canned tomatoes, tomato sauce, salt, oregano, basil, celery seed, and bay leaves. Pour all these over chicken.
Add mushrooms and peppers. Cover and simmer 30 minutes. Stir in dry white wine and cook uncovered 15 minutes more. Remove bay leaves, skim fat, and ladel sauce over chicken.
