Mom's Potato Candy

what you need
  • 1 small Idaho potato
  • 1-2 boxes powdered sugar
  • 1 jar peanut butter (crunchy or smooth)
make it
Boil a small potato until tender and drain well.

Place peeled potato in a large bowl. Begin mashing while slowly adding powdered sugar. Add enough sugar to make a stiff dough. (Work fast as the dough hardens as it cools.)

Sprinkle some of the powdered sugar on waxed paper and roll out the dough thinly (about the thickness of pie crust is good). Spread peanut butter evenly over the dough and roll into a log shape. Cut into slices and chill before eating.
Notes
Years ago, a lot of moms in the Ozarks made this sweet treat, especially at Christmas time. It is a very easy candy recipe to make.

Rated  by taniab40 on 6/8/2006 My great-grandmother, who we called "Mom", taught me how to make it as a little girl, around the age of 7 or 8. She left me several recipe's, but I couldn't find this one for years. When I went to Kentucky, from the deep south, last year I got it from family there. Hers was slightly different, u added a 1/2 tsp milk to the potato and sugar and you chilled in the refrigerator before you sliced it. It is a favorite of my children and their families.
