Enchiladas for One

what you need
  • 1/2 boneless skinless chicken breast, cooked
  • 1/4 cup Taco Bell Fat Free Refried Beans
  • 2 Tbsp. Taco Bell Salsa
  • 2 whole wheat tortillas
  • 1/2 Kraft 2% Milk Sharp Cheddar Cheese Slice
  • 1/4 cup enchilada sauce
make it
1. Preheat oven to 350 F. Cut up chicken into small pieces. In small bowl, mix with refried beans and salsa.

2. Line a baking pan with aluminum foil. Place 1/2 of mixture down the top of each tortilla, near the center. Break 1/2 cheese slice into pieces and place on top of mixture on tortillas. Roll up tortillas and place seam side down in pan.

3. Cover enchiladas with enchilada sauce. Bake at 350 F for 30 minutes.

4. Top with lettuce, sour cream, more cheese, black olives, etc. if desired.
Notes
Shredded cheddar cheese can be substituted for the cheese slice.
