what you need
- 2 lb. tri-color frozen cheese tortellini
- 8 green onions
- 1 red bell pepper
- 1 yellow bell pepper
- 1 Tbsp. & 1 tsp. chopped fresh oregano
- 1 ½ cups KRAFT Special Collection Sun-Dried Tomato Vinaigrette Dressing, divided
make it
Bring two quarts of water to boil in pot. Add frozen cheese tortellini. Cook about 7 minutes, until most of pasta starts floating in the pot. Pasta should still be very firm. Remove from heat, place in sink and run cold water into pot with tortellini until pasta is cool. Put tortellini in large bowl.
Dice green onion and peppers, place in the bowl with the pasta. Finely chop fresh oregano, place in bowl. Add 1 cup of the Sun-Dried Tomato Vinaigrette Dressing, mix well. Cover bowl and put in refrigerator overnight. Before serving, mix in remaining ½ cup of dressing.
Notes
Fresh oregano is best, but you can substitute 2 Tbsp. dried oregano.
Non-green peppers are usually more expensive, but they provide really nice color.
