what you need
- 1 cup (uncooked) long grain rice
- 1 can (10 1/2 oz.) beef broth
- 1 can (10 1/2 oz.) beef consommé*
- 1 can (4 oz.) mushrooms, pieces and stems
- 1 medium onion, finely chopped
- 1 stick butter

Combine all ingredients is a 2-quart casserole dish.
Bake at 350 degrees F for 1 hour, or until rice is tender. Stir 2 or 3 times during baking process.
If you don't like oven time, you can bake in the microwave approximately 30 minutes on high power.
Notes
*When I don't feel like cutting an onion up, I substitute one (10 oz.) can of French Onion Soup in place of the beef consommé. It works just as well. This recipe goes over great at family reunions and church dinners.
