Zucchini/ Maraschino Cherry Bread

what you need
  • 3 eggs
  • 2 cups sugar
  • 2 tablespoons vanilla
  • 3/4 cup oil
  • 2 cups grated zucchini
  • 1 cup crushed pineapple, drained
  • 3 cups flour
  • 1 teaspoon cinnamon
  • 1 teaspoon heaping baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup raisins
  • 1 cup chopped nuts
  • 1 jar maraschino cherries - cut in half - drained
make it
Mix first four ingredients until well blended; add grated zucchini and stir until zucchini is completely mixed in.

In another bowl: mix flour, cinnamon, baking soda, baking powder, salt. Add dry ingredients to first mixture - add raisins, nuts and cherries. Stir until all is well blended.

Grease 3 medium bread pans and bake at 350 degrees for 1 hour. Check for doneness in the middle with a toothpick. Cool for 10 to 15 minutes them remove from bread pans.
These freeze very well.
This is a very moist and tasty bread. I freeze several of these to enjoy during the winter months. I also give them as Christmas gifts to friends, mailman, etc.

I have several zucchini bread recipes, but this is my favorite!

Rated  by mrw928 on 7/29/2008 This was really good. I do not like raisins, so I added 1/2 cup of crushed pineapple instead. I will make this again but I think I will quarter the cherries and add more sugar next time.
