Hot Balsamic Fall Salad

what you need
  • 2 cups of brown sugar
  • 2 cups of pecans
  • 1 bag spinach
  • 1 cup fresh blueberries (if you do not like blueberries, you can use strawberries)
  • 3/4 cup of bleu cheese
  • A few round slices of red onion
  • Balsamic vinegar dressing
make it
On the stove, heat brown sugar (stir with spoon entire time) at a low to medium heat. When sugar is almost melted, add pecans. Stir pecans and sugar around for a minute or until sugar is stuck to the pecans. (Do not leave pecans in sugar very long).

Remove pan from heat and use a spoon to place pecans on a baking sheet. Allow pecans to cool completely. Once pecans are cooled, seperate them with your hands (if they are stuck together).

Combine spinach, blueberries, and slices of red onions in plastic bag. Shake well. Pour the bag onto four plates. Add cooled pecans to salads.

In another pan, heat balsamic vinegar dressing on medium heat. When the salad dressing begins to steam (do not bring to a boil), remove from heat and pour over each salad. Enjoy!
Notes
For clean up, soak pot with remaining sugar in water. The sugar will absorb into the water.

This is one of my favorite salads. I sometimes make extra sugar pecans for treats.

Most important note: Do not try to speed up melting process for sugar, you do not want to burn the sugar.....
