Pineapple Casserole

Makes: serves 8 to 10 depending on servings Total Time: 1 hr 5 min

what you need
  • 3 eggs
  • 3 tablespoon flour
  • 1/2 cup sugar
  • 1 whole can crushed pineapple - including juice
  • 4 slices bread broken up in small pieces
  • 3/4 stick melted butter
make it
Butter casserole dish well. Mix: eggs, flour, sugar and pineapple until well blended. Add to casserole dish.

Mix bread pieces and melted butter. Sprinkle over top of pineapple mixture.

Bake 350 for 1 hour. Cool on rack until completely cooled.
This goes well with ham loaf or baked ham - I have served it at several brunches and always have request for the recipe. Nice and light and tasty!!

I usually fix this for our Easter dinner along with baked ham.

I make mine in a 9x13x2 baking pan.

Rated  by Pegasus55 on 4/11/2011 This recipe is foolproof! I have been making it for years, and it is always a hit. It is simple and versatile--it's good hot, cold, or at room temperature. Once when I had unknowingly run out of flour, I used 3T of pancake mix, and it still turned out great.
