Blueberry Cream Cake

what you need
  • 1 1/2 cups all purpose flour
  • 1 cup sugar, divided
  • 1/2 cup (1 stick) butter
  • 1 1/2 teaspoon baking powder
  • 1 large egg
  • 2 teaspoon vanilla, divided
  • 1 quart fresh blueberries, washed and destemmed
  • 2 cups sour cream
  • 2 large egg yolks

Preheat the oven to 350 degrees. Grease a 9-inch baking pan. Combine the flour, 1/2 cup of the sugar, butter, baking powder, egg and 1 teaspoon vanilla in a large bowl, and mix thoroughly. Turn into the prepared pan, and sprinkle evenly with the blueberries.

Combine the sour cream, egg yolks, the remaining 1/2 sugar, and the remaining 1 teaspoon vanilla in a medium bowl, and blend well. Pour over berries.

Bake for 1 hour or until edges are lightly browned. Set on wire rack to cool.
This is one of my favorite things to bake when blueberries are in season! It is so moist and light. Can be served with a dollop of Cool Whip. We love blueberries so I'm always looking for new recipes with blueberries in them.
