what you need
- 1 1/2 cups sugar
- 1 cup Crisco
- 2 eggs
- 1 tsp. vanilla
- Juice and rind of 2 oranges
- 1 cup buttermilk plus 1 tsp. soda (mixed together)
- 4 1/2 cups flour
- 3 tsp. baking powder
- FROSTING:
- 1 lb. box powdered sugar
- 3 Tbsp. melted butter
- 1 tsp. vanilla
- Rind and juice of 1 orange
- (may need to add more moisture to frosting; more orange juice or a little water)

In large bowl mix: sugar, Crisco, eggs, vanilla, and juice and rind of 2 oranges - mix until well blended. In another bowl: mix all dry ingredients. Add to wet ingredients and alternate with the buttermilk/soda mixture.
Stir until you are sure everything is completely mixed. Drop by teaspoon on parchment lined cookie sheet.
Bake at 350 degrees for 5 to 8 minutes or until light golden. Wait until cookies are cooled then frost cookies - let out until frosting is set.
Notes
This is one of the first cookies I make for Christmas. A teacher friend had brought this to a cookie exchange an I was hooked!!! Very light and tasty - makes a nice big batch. I make these a couple times of year just to send to my son who lives out of state. Enjoy!!
