Super Easy Brunch Casserole

what you need
  • 1 lb. pork sausage
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped red bell pepper
  • 3 cups frozen hash brown potatoes, thawed
  • 12 eggs lightly beaten
  • 1 1/2 cups milk
  • 1/2 tsp. salt
  • 1 cup Kraft Shredded Cheddar Cheese
make it
1. Brown sausage, stirring until it crumbles; drain. Add green and red bell peppers. Saute 5 minutes or until tender.

2. Place hash browns in lightly greased 3 quart baking dish. Top with cooked sausage and pepper mixture. Combine eggs, milk, and salt in a large bowl, stirring with a whisk until blended; pour egg mixture over sausage mixture. Sprinkle with cheese. Cover and bake at 350 F for 1 hour or until golden and set.
This casserole is easy and fast to put together.

Rated  by justmelane on 5/12/2010 My family enjoys breakfast for supper so I made this for an evening meal with muffins and fruit salad for dessert. It was a big hit and easy. Will be making this again for sure.
