Cheesy Ham and Potato Soup

what you need
  • 6 large potatoes, diced
  • 2 cups water
  • 1 tsp. dried minced onion
  • 1 clove garlic, minced
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 cup milk (I use 1%)
  • 12 oz. shredded cheddar cheese
  • 1 ham steak, diced
  • 2 Tbsp. butter
  • 2 chicken bouillon cubes

In large saucepan or Dutch oven combine potatoes, water, onion, garlic, salt and pepper; bring to a boil over medium heat. Reduce heat, cover and simmer for 10-15 minutes or until potatoes are tender. Do not drain.

Mash potatoes in liquid until smooth. Add remaining ingredients; cook and stir until cheese is melted. Serve immediately!
This is a hearty soup that has people coming back for more! I serve with fresh bread or biscuits with my favorite fresh fruits and a salad on the side.
