what you need
- 2 chicken breasts, broiled or grilled and cut into strips
- 1/2 cup premade or homemade pesto
- 4 tortillas or flatbread
- 1 cup Kraft Ranch Dressing
- 1 cup shredded lettuce
- 1 tomato, chopped
- *Homemade Pesto Sauce
- 1 cup tightly packed fresh basil leaves
- 2 cloves garlic
- 1 tablespoon olive oil
- 2 tablespoons fat free Italian dressing
make it
Broil or grill chicken, then cut into strips. Add the strips to a bowl with the pesto and toss.
Lay each tortilla or flatbread out on a plate. Pour 1/4 cup ranch dressing on each. Then add 1/4 of the lettuce and 1/4 of the chopped tomato to each. Add strips of the pesto chicken, fold, and serve!
Notes
*I use sun-dried tomato tortillas, but flatbread folds easier.
*Microwave the tortillas before creating the wraps. They are easier to fold when warm.
*Homemade pesto sauce is pretty easy to make:
1 cup tightly packed fresh basil leaves
2 cloves garlic
1 tablespoon olive oil
2 tablespoons fat free Italian dressing
Blend in a processor until chopped.
