what you need
- 1 package (1 lb.) dry green split peas
- 5 cups water
- 1 large or 2 medium onion(s), chopped
- 2 cloves garlic, minced
- 4 large (or 1 lb. bag baby) carrots, sliced
- 1 large smoked turkey wing or drum stick, may also use cooked left over ham, smoked sausage, or meat of choice (may omit and serve vegetarian)
- Hot sauce
- Seasoned salt and pepper to taste
- Instant mashed potato flakes
- Serve with biscuits, dinner rolls, or corn bread

Wash and drain split peas. In large pot, put 5 cups water, peas, onions, garlic, and carrots. Bring to boil then cover and simmer for 35 minutes.
After 35 minutes, may add meat. Continue to simmer until peas are dissolved. Cook for an additional 35-40 minutes until slightly thickened.
Turn off, cool. Soup will thicken as cools. If prefer thicker add instant mash potato flakes, thinner add water, milk or stock. Season with hot sauce, pepper, and season salt. Serve with biscuits, dinner rolls, or corn bread.
Notes
May serve with or without meat. Even picky eaters like this soup! ENJOY!
